Dried bonito is Japanese traditional food. Today it is not only used in Taiwan family, but also a manufacturing plant is built to produce bonito, supplied to Taiwan, and exported to Japan. Bonito flavor which should be a food of“foreign culture”, from when was it transmitted under what background of the era, did it penetrate Taiwanese taste? In this paper, we will analyze the production and sales channels of bonito flakes, and examine the relationship between bonito in Taiwan as a meal and Taiwanese people.
