アメリカの家政教育の発展とE.H.リチャーズの役割を考える時, 1893年のシカゴ万国博覧会におけるランフォード・キッチンの展示を考察の対象から除外することはできない。本研究ではこの展示の教育的意義を明確にするとともに, 展示場で配布された大衆向栄養教育用の一連のパンフレットの内容を検討した。また, 展示という教育方法に対するリチャーズの考え方を明確にした。この結果, 以下の諸点が明らかになった。

(1)シカゴ万博におけるランフォード・キッチンの展示は, 国内の栄養教育の啓発や増進に効果を発揮した。(2)キッチンで即売された栄養教育用冊子は, 当時の最先端の栄養学・生理学者が執筆しており, その趣旨は最新の科学の研究成果を日常生活に結びつけることであった。(3)リチャーズは, 万博が家政学やその教育に及ぼす影響について十分に理解していた。(4)リチャーズは, 展示の必要性, 教育効果, その方法について明瞭な考えを持っていた。

When we consider the development of home economics education in the US and the role of E. H. Richards, the exhibit of the Runford Kitchen at the Chicago World's Fair of 1893 should be remembered.

It was intended by this paper to make explicit the educational meanings of the exhibit of the Rumford Kithen, the contents of the series of leaflets prepared for the kithen and the ideas of Richards on the exhibit as the home economics educational methord.

After the examination of resorces and documents,the following points are revealed.

(1) The exhibit of the Rumford Kitchen at the Chicago World's Fair was effective in developing and promoting the nutrition education in the US.

(2) The series of leaflets were written by authorities of nutrition, and their aim was to link the results of science study with daily living.

(3) E. H. Richards was able to understand the effects of world's Fair on the developmemt of home economics and its education.

(4) E. H. Richards possessed a firm faith to the needs, effects and methords of home economics exhibit.
