抄録 |
In this paper, I discussed the modernization in dietary life related with the appearance of modern family type.
With development of agricultural production, our dietary life has changed rapidly, especialy livestock products consumption has remarkable increased. Westernization has developed on the base of the Japan style in dietary life which was characterized by the bulk of rice and poor sidedishes. Though that brought improved nutritional balance, recently excessive westernization, e.g. intake of animal fat and protein, has advanced beyond the balance point of nutrition. Modernization in dietary life has been brought by not only increased foodstuffs supply but also changing family form. A change from small dinner tables, by the name of Zen, for each family member to a dining table for a family stood for the appearance of modern family type and housewife. It corresponded to the popularization of housecooking which carried westernization of dietary life. Recently, many housewives have begun to work and socialization or externalization of food consumption has expanded. Restaurant chains and lunch businesses spread all over the country, and also diversification in eating style has spread. "Why do you eat alone?" is the name of popuralized book, i.e. the style of eating alone in a family has been increasing. But it has more cases in the family carried by housewife than the family that has working couple. |
